I eat a lot at roadside stalls when i go to India and i always see, its either they use a small knob of butter to fry eggs or toast or they deep-fry the aloo-bhaji/begunis etc in dalda.
I am fairly convinced that every deep-fried roadside dish in India is fried in dalda.

palm oil is so versatile, and so invasive EVEN BY THE GOVERNMENT POLICIES that it's virtually everywhere = ~95 percent bakeries use it in their breads, cakes (Even icing of the cake is made with that), biscuits, cookies etc all
then you have so called chocolates here, packaged syrups, sauces-ketchups, AACHAAR (high in both palm oil + VINEGAR huh?!) and what not...
oh, and that 'small knob of butter' you mentioned, AGAIN, PALM OIL, IT'S MARGARINE = HYDROGENATED PALM OIL USED AS 'COOKING BUTTER ANALOGUE'
and did you know that IT WAS GOVERNMENT POLICY HERE TO ALLOW 1/3RD ADULTERATION OF COOKING OIL WITH PALM OIL HERE?! SIMPLY BECAUSE DOMESTIC PRODUCTION OF OIL SEEDS STILL CANNOT SATIATE THE DEMAND HERE, DESPITE YEARLY PRODUCTIONS CONSTANTLY GOING HIGH?!

^means even in most premium packaged cooking oil, high chances 1/3rd of it is palm oil mixed with your preferred oil let's say sunflower oil here

this is one big reason when muh muhatir of malaysia was given a kick on his butt, oil prices suddenly skyrocketed here, but even then bajaru prices had to be maintained, then government hit a big sixer on palm oil mafias by removing that 1/3rd mixing allowance thing, so these cooking oil guys simply stopped that 1/3rd mixing of palm oil with other cooking oils here and simply raised prices of palm oil = means, cooking oil market truly went through 'equalisation' for first time in years, ab tum mungfali ka tel lo ya palm ka, price was almost same...and consumers got to have better cooking oils without palm shit
but how come a country like India that uses diverse kinds of cooking oils still get to import tonnes of palm shit ? i mean one part i already explained, huge population and huge demand while not so huge production of oil seeds...
nah, the real reason lies with GREEN REBOLUSHAN meme...government of that time put this planned economy thing to become aatmanirbhar with grains, so most kisaan started moving towards that, and production of many things, be it fruits, lentils, pulses, AND SEED OILS all started getting affected

- now after years of success of muh green rebolushan situation is still not better, that the Govt has to constantly roll out this that schemes with assured minimum selling price junjuna to these farmers so they are motivated to grow and sell things which is not just grains
another factor of bad situation of cooking oil scenario, at least here in gujarat side, so mungfali ka tel is like our go-to cooking oil since generations, as gujarat grows helluwa crops of mungfali...BUT, that same mungfali can aslo be consumed for other things from simple snacks, to chikki and what not...MOST OF THE PREMIUM QUALITY MUNGFALIS GROWN HERE IS SIMPLY SOLD TO WESTERN MARKETS AS 'DAARU KA CHAKHANA'
