I think so far Iran's eastern and central areas have been left untouched for following reasons:
The combat radius of USA/Israel's main strike aircrafts are following:
F-35 = 800km
F-15 = 1200km
F-16 = 500km
The distance between Tehran and Tel Aviv is roughly 1500km. Although, most people are talking about F-35s but I personally think USA/Israelis are mainly using F-15s. The aircrafts that comprise ingress are being refueled somewhere over West Bank. As you can see, anything further east in Iran will be difficult if not impossible to hit.

Regarding Russia and China:
I am surprised that:
a. Iran was not supplied with good A2/AD platforms in sufficient numbers
b. There was no plan hatched up to disrupt USA/Israeli mid air refueling
c. Also some hypersonic Russian IRBMs and IRCMs would have helped Iran in this crisis. Russia could have used this opportunity to play hardball

Many people who have poor understanding of combat, tend to think that attack and defense are decoupled from each other. However in reality, they are one and the same: attack can be used as defense and vice versa.

Since Iran does not have good air force, it cannot launch attacks on Israel using aircrafts. Also, since Iran does not have a good SAM network, it cannot count on defensive tactics.

This leaves Iran with the only option of using missiles as attack and defense. What I mean by using missile as defense: Iran will use cheaper missiles to deplete USA/Israeli SAM missiles. After that, it will use more sophisticated missiles to carry out precision hits on HVTs.

If Russians and Chinese had forethoughts of supplying some of their high-end missiles to Iran, then things can get quite complicated. Also, if Iranian military facilities were heavily fortified and could survive USA/Israel hits, then after the war is over, Iran would simply resume its nuclear program. This is why I think, it was a madness on the part of USA/Israel to start this mess. But who knows, maybe USA/Israel had intelligence that Iran does not really have the ability to do precision strikes on Israel.

Let us see how it plays out. It is too early to call.
